Ground Beef and Sweet Potato Skillet with Brussel Sprouts

Ingredients

  • 1 Tbsp avocado oil or olive 
  • 1 small red onion
  • 1 lb ground beef
  • 8 ounces Brussel sprouts
  • 1 small sweet potato
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 1 tsp sea salt to taste

Instructions

  1. Add all of the ingredients to a large skillet and heat to medium-high. Place the ground beef in the center of the skillet to allow it to brown for 2 minutes before flipping it to the other side and browning another 2 minutes.
  2. Chop up the beef using a spatula, then stir it into the vegetables.
  3. Turn the heat down to medium, cover the skillet and cook for 10 to 15 minutes, stirring occasionally, or until the vegetables have reached your preferred level of done-ness.
  4. Taste for flavor and add sea salt to taste.
