Grilled Salmon & Cauliflower Steaks
Ingredients
- 1/3 cup Greek Dressing
- 1 large head cauliflower
- 1/4 cup olive oil, divided
- 3/4 tsp Sea Salt Flakes
- 3/4 tsp Coarse Ground Black Pepper
- 4 salmon fillets (4 to 5 oz each)
- 1 lemon, cut into 1/4-inch thick slices
- 1/4 cup caper berries
- 4 tsp finely chopped fresh dill
Directions
- Slice cauliflower lengthwise through core into four 1-inch thick steaks.
- Brush steaks with 2 tbsp oil; season with 1/4 tsp each salt and pepper. Toss salmon fillets with remaining oil, salt and pepper.
- Preheat grill to medium heat; grease grates well. Grill cauliflower, turning occasionally, for 15 to 20 minutes or until charred and tender.
- Meanwhile, grill salmon for 3 to 5 minutes per side or until cooked through and just starts to flake. Grill lemon slices for 1 to 2 minutes per side or until lightly charred.
- Arrange grilled cauliflower steaks, salmon and lemon slices among 4 plates. Drizzle with Newman’s Own Avocado Oil & Extra Virgin Olive Oil Dairy Free Greek Dressing. Garnish with caper berries and dill.
Tip:
– Substitute mint for dill if desired.
– Add 8 cups mixed greens as a bed
