2-4 oz. fillets Walleye or any other light tasting fish
Salt and pepper
For Citrus Butter Sauce
4 tbsp butter
1/4 cup dry white wine or chicken stock
2 tbsp fresh lemon juice
1 tbsp fresh orange juice
1/2 tsp minced garlic
1 sprig fresh oregano
1/4 tsp salt
1/8 tsp black pepper
Directions
Heat wine, lemon juice, orange juice, oregano sprig and garlic over low heat in a saucepan. Bring to a simmer and cook for 3 minutes. Add butter 1 cube at a time until melted. Simmer for 2 minutes longer.
Turn heat off and season with salt and pepper. Discard oregano sprig.
Heat a cast iron grill pan over medium and grease with cooking oil. All pan to heat for 2 minutes. Blot walleye with paper towel to remove excess moisture and season flesh with salt and pepper.
Place walleye on skillet flesh side down and grill for 4 minutes. Flip and turn for 3-4 minutes longer or until cooked through.
Serve hot drizzled with citrus butter sauce And garnish with sliced oranges.
