Grilled Walleye with Citrus Butter Sauce
Makes 2 servings
Ingredients
- 2-4 oz. fillets Walleye or any other light tasting fish
- Salt and pepper
For Citrus Butter Sauce
- 4 tbsp butter
- 1/4 cup dry white wine or chicken stock
- 2 tbsp fresh lemon juice
- 1 tbsp fresh orange juice
- 1/2 tsp minced garlic
- 1 sprig fresh oregano
- 1/4 tsp salt
- 1/8 tsp black pepper
Directions
- Heat wine, lemon juice, orange juice, oregano sprig and garlic over low heat in a saucepan. Bring to a simmer and cook for 3 minutes. Add butter 1 cube at a time until melted. Simmer for 2 minutes longer.
- Turn heat off and season with salt and pepper. Discard oregano sprig.
- Heat a cast iron grill pan over medium and grease with cooking oil. All pan to heat for 2 minutes. Blot walleye with paper towel to remove excess moisture and season flesh with salt and pepper.
- Place walleye on skillet flesh side down and grill for 4 minutes. Flip and turn for 3-4 minutes longer or until cooked through.
- Serve hot drizzled with citrus butter sauce And garnish with sliced oranges.
