Joe’s Marinated Chicken Breast Club Sandwich

Easy to make and to take!
Head to your favorite picnic spot with this sandwich recipe. Remember to bring fresh fruit, like cherries, green or red grapes from Joe’s Produce. They’re easy to pack and pop in your mouth. Grab a bottle of wine or two and enjoy!
Ingredients
Makes 2 sandwiches
- 6 slices Multi-grain from Art of bread by Joe’s, lightly toasted
- 4 tablespoons mayonnaise
- 2 Grilled Marinated Chicken Breast from Joe’s Meat and Seafood, thinly sliced
- 4 1/4-inch-thick slices beefsteak tomato
- 1 avocado, thinly sliced
- 8 slices cooked bacon
- Coarse salt and freshly ground black pepper
- 4 iceberg lettuce leaves
- 4 small pickles
Directions
- Lay toasted bread slices side by side on a clean work surface and divide mayonnaise between them. Divide chicken between two slices of bread, followed by tomato slices, avocado, and bacon. Season with salt and pepper. Top with lettuce, place one bread “stack” on top of the other, and close sandwich with remaining slice of bread.
- Spear each pickle with a 6- to 8-inch wooden or metal skewer and secure two corners of the sandwich from top to bottom with skewers. Cut sandwich in half and serve immediately.
